Spoiled rotten

Sam's Sunday indulgence: scrambled eggs and country bacon on top of homemade bread buttered toast. What're you having for breakfast?

  1. What do you suggest for easy appetizers or dips for a small NYE gathering? We seem to have similar taste in food

  2. Pillsbury crescent rolls sliced with a pizza cutter into thin/short strips and wrapped around lil smokies and make sure to have a variety of dips available.

Pillsbury crescent rolls out of the tube and flattened then take a large mouth glass and press out circles, keep flattening and punching out holes. In a large mixing bowl take Philly cream cheese and chopped olives and mix. In a food processor take pepperoni minis and shred until pretty fine and then mix pepperoni in with cream cheese and olives then take tablespoons and fill little circles and wrap into a ball and bake in a muffin tin and serve hot out of the oven.

Take Large tortillas and place on cookie sheet. In a mixing bowl Philly cheese brick and your favorite salsa and garlic and mix well. Spread this evenly onto tortilla then take thinly sliced deli meats and lay flat onto tortilla, then take large lettuce "not romaine" leaf and remove from its stalk only using the leaf portion, then wrap from top to bottom and hold it together with toothpicks and put into the freezer until 30 minutes before serving time then slice like bread, being sure to take out the tooth picks!

    Happy New Year!

  3. Pillsbury Sausage Rounds

Sausage balls can be as simple or as involved as you want. With Bisquick as the base, you can add a variety of ingredients to change up a basic recipe.

Most recipes use in the area of 2 cups of Bisquick, and mix the ingredients raw. There are some that cook the sausage and other ingredients first. Generally, these will not bake as long. Also, the preferred size is a one inch ball, (if no size is listed, use 1 inch).

At its most basic, the Bisquick Sausage Ball recipe is:

10 oz grated cheese (usually cheddar)
    1 Pound sausage
    2 Cups Bisquick
    ½ Tsp garlic (optional)

Mix thoroughly, form into balls, bake in 350 degree oven for 20-30 minutes or until done. Changing cheeses or using different types of sausage changes the flavor. Adding additional ingredients also adds to it. Fresh minced onion or bell pepper can really jazz it up.
Among my favorites is Sausage Potato Cheese Balls:

    2 Cups grated Cheddar-Jack cheese
    1 Pound sausage
    4 Heaping Tbsp Sour Cream
1 Cup grated potatoes (put on paper towel to absorb excess moisture)*
    2 ½ Cups Bisquick

You can use frozen hash browns, thaw and paper towel as above. Mix together, form into balls, bake on parchment paper in 375 degree oven for 30 minutes or until golden brown.

    Cooked Sausage Balls:

    1 Pound favorite sausage
    1 onion, finely chopped
    2 cloves garlic, minced
    ¼ cup chicken broth
    ½ to 1 Tsp salt
    ½ Tsp onion powder
    ½ Tsp garlic powder
¼ Tsp ground sage or Bell’s Seasoning (opt)
(Note: spices may be adjusted to taste)
    10 oz grated cheddar cheese
    3 Cups Bisquick

In a skillet over low heat, break up sausage and simmer in chicken broth with all the other ingredients except cheese and Bisquick. Stir frequently until sausage is no longer pink, about 20 minutes. Do not brown. Let cool about 10 minutes.

Combine all ingredients, roll into balls and bake at 375 degrees for about 12 minutes or until done.

There is even a recipe that doesn’t use cheese at all- Breakfast Sausage Balls:

    1 Cup Bisquick
    1 Pkg Hot Sausage
Mix ingredients, Bake at 350 degrees for 25 minutes or until done.

    Have a ‘ball’ and enjoy.
